Cupcakes? Did Someone Say Cupcakes!?

CUPCAKES!!! My all time favourite thing to bake, I mean you doesn't love a good cupcake now and then? I always always use this recipe I have used it now for 6 years and it has never ever let me down, so if you want a easy peasy cupcake recipe then you're in the right place and here it is....

Makes 12

What You Will Need-

  • Baking tin
  • Cupcake cases
  • 125g Self raising flour
  • 125g Caster sugar
  • 125 Softened butter
  • 2 eggs
  • 1 tsp Vanilla essence


What Do I Do?
  • Preheat the oven to 180c.
  • Cream the butter and caster sugar together until it's light and fluffy.
  • Whisk the eggs and vanilla essence together. Then add to the mixture and mix together until it's blended evenly.
  • Sieve the self raising flour into the mixture and mix together until the mixture is smooth. Make sure you get air into the cake mixture but whisking it as this will make your cake rise. 
  • Spoon the mixture evenly into the cases and place in the oven for 20-25 minutes or until golden brown and a fork is clean after being poked into the cake. If the fork has cake mixture on put the cakes back into the oven. Allow the cakes to cool before decorating. 




I decorated mine with chocolate icing from Dr. Oetker and just added some decorations but you can decorate yours anyway you like or leave them plain it's up to you. I feel with a cupcake you can really put your own twist on it. I hope you enjoyed baking these and leave comments below to let me know what you think of the recipe.

Vanilla Ice Cream!!!

So recently Britain has had a heat wave and it feels like being abroad...yay! I thought it would be a good idea to make some ice cream!! I've used this recipe before and it worked really well. This recipe is really simple to follow, it just takes a bit of time to make.



Serves 4-6

You will need

  • Saucepan
  • Sieve 
  • Glass bowl
  • Whisk ( hand or electric)
  • Wooden spoon
  • 300ml single cream
  • 300ml double cream
  • 1 vanilla pod (you can buy these from most supermarkets or your local health store) 
  • 4 large egg yolks
  • 115g caster sugar

How to make it
  • Put the single cream and double cream into a saucepan. Open the vanilla pod and scrape the seeds out and add them to the saucepan along with the whole pod. Heat the mixture up to almost the boil. Don't let it boil otherwise it will curdle.
  • Leave to allow the vanilla to infuse the cream for 30 minutes. Whisk together the egg yolks and caster sugar together until the mixture is pale and leaves a trails when the whisk is lifted. Add the cream slowly whilst stirring into the egg mixture.
  • Strain the mixture back into the saucepan and return to the heat for 10-15 minutes until the mixture has thicken and covers the back of  a wooden spoon. Remove from heat and allow to cool for at least 1 hour, stirring occasionally to prevent a skin from forming. 
  • Pour into a container and freeze for 1-2 hours then mix the mixture to ensure it's smooth. Freeze the mixture overnight. Then Ta Da! You've made your very own ice cream!!
